TACO MEATLOAF






What You'll Need


  • one pound ground turkey
  • two slices of cheddar cheese
  • 1/2 cup canned sweet corn kernels
  • 1/4 cup chopped green bell peppers
  • 1/4 cup chopped onions
  • 1/2 cup salsa
  • one packet of taco seasoning mix, dry
  • 1/2 cup shredded cheddar cheese


How to Make It


  • Preheat oven to 375 degrees
  • Cook peppers and onions for three minutes over medium heat in a pan sprayed with non-stick spray
  • In a large bowl, combine onions and peppers with turkey, corn and seasoning mix.
  • Spread half of the mixture evenly into the bottom of the loaf pan (about 9″x5″) sprayed with nonstick spray.
  • Layer the two slices of fat-free cheese on top of the mixture (try to keep slices away from the pan’s edges).
  • Evenly top with the remaining meat mixture.
  • Pour the salsa over the top of the loaf.
  • Cook in the oven for 30 minutes.
  • Top loaf with shredded cheese.
  • Return loaf to the oven and cook for another 15 minutes.

    HAMBURGER STEAKS WITH ONION GRAVY






    What You'll Need


    • 1lb. ground beef
    • one egg
    • 1/3 cup bread crumbs
    • one clove garlic minced
    • 1tsp. Worcestershire sauce
    • 1tbsp. oil
    • one 1/2 cup thinly sliced onion
    • 2tbsp. all-purpose flour
    • one cup beef broth
    • 1/2tsp. salt
    • 1/2tsp. black pepper
    • one tsp. salt
    • 1/2 tsp. onion powder


    How to Make It

  • In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic, and Worcestershire sauce.*
  • Form into thick patties.
  • Heat the oil in a large skillet over medium heat.
  • Fry the patties and onion in the oil until patties are nicely browned.
  • Remove the beef patties to a plate, and keep warm.
  • Sprinkle flour over the onions and drippings in the skillet.
  • Stir in flour with a fork, scraping bits of beef off of the bottom as you stir.
  • Gradually mix in the beef broth.
  • Season with seasoned salt.
  • Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens.
  • Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.
  • Serve with a big bowl of mashed potatoes .

    Easy Cheezy Sausage Biscuit Bites






    What You'll Need


    • two (10 count) cans flaky biscuits (Grands Jr)
    • one lb sausage (Tennessee Pride)
    • two cups shredded cheddar cheese


    How to Make It

  • Preheat oven to 400.
  • Mix uncooked sausage and cheese gently until well blended.
  • Shape into 40 balls of equal size.
  • Remove biscuits from cans and separate each biscuit into two layers, making 40 total biscuit layers.
  • Press one layer of biscuit into cup of lightly greased mini-cupcake pan.
  • Repeat with remaining layers.
  • Place sausage-cheese ball in each biscuit cup.
  • Bake for 8 to 10 minutes or until biscuits are browned and sausage balls are bubbly.

    Caramel apple cobbler






    What You'll Need


    • one box yellow cake mix
    • one jar caramel
    • one stick butter
    • two cans apple pie filling


    How to Make It

  • Butter 9x13 pan
  • Pour apple pie filling in
  • On top put the DRY cake mix
  • Then drizzle caramel over.
  • Pour melted butter throughout.
  • Bake 350 for 45 minutes

    Enchilada Casserole Recipes






    What You'll Need


    • nine corn tortillas
    • ten oz can, enchilada sauce
    • one onion, chopped
    • 1/2 tsp cayenne pepper, or more to taste
    • one salt & pepper
    • one can green chili, chopped
    • 1/2 cup cilantro, chopped
    • 15 oz can, black and/or pinto beans
    • one box spinach, frozen and thawed or fresh chopped
    • one bag of cheese, shredded
    • one can black olives, sliced
    • one green bell pepper, chopped
    • two zucchini, sliced small
    • 1/2 tsp cumin, ground
    • one tsp oregano


    How to Make It

    Note: You can use any vegetables you have on hand.
    I'd recommend keeping the onion and bell pepper though.
    Saute the onion and bell pepper in large pan.
    Add the zucchini and saute for another 3 to 4 minutes.
    Add all seasoning and oregano.
    Stir for one minute.
    Rinse beans.
    Add green chili, cilantro and beans.
    Stir and cook for 5 minutes.
    Preheat oven to 375°.
    To large casserole dish, pour 1/2 cup sauce and spread to cover bottom of dish.
    Add tortillas to cover bottom of dish.
    Pour bean and vegetable mixture from pan over tortillas.
    Spread evenly with a spoon.
    Sprinkle a little bit of cheese on top
    Wrap thawed frozen spinach in three layers of paper towel and squeeze all liquid out of spinach.
    Add spinach on top of bean and vegetable mixture.
    If using thawed spinach, tear apart with hands and layer on top. If using fresh, sprinkle on top
    Layer tortillas on top covering spinach.
    Pour enchilada sauce on top.
    Spread sauce to completely cover tortillas.
    Cover dish with foil tenting foil to try and keep the foil from touching the sauce.
    Bake in oven for 40 minutes
    Remove foil. Cover with remaining amount of cheese.
    Sprinkle on olives and cilantro (optional).
    Raise oven temperature to 400° and bake for another 15 to 20 minutes until cheese is lightly brown.
    Let casserole rest for 10 minutes before cutting and serving. Recommended step.

    What You'll Need


    • one-1/4 cups water
    • 1/3 cup shortening
    • 3/4 cup finely shredded Romano or Parmesan cheese (3 oz.)
    • two tablespoons chopped fresh parsley
    • 1/8 teaspoon garlic powder
    • 1/8 teaspoon pepper
    • one jar pizza sauce
    • one-1/2 cups all-purpose flour
    • four eggs
    • 3/4 cup finely chopped pepperoni (3 oz.)


    How to Make It

  • Grease two large baking sheets and set aside.
  • In a large saucepan combine water and shortening.
  • Bring to a boil.
  • Add flour all at once, stirring vigorously.
  • Cook and stir until mixture forms a ball.
  • Remove from heat. Cool for 10 minutes.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in pepperoni, cheese, parsley, garlic powder, and pepper.
  • Drop dough by rounded teaspoons two inches apart onto prepared baking sheets.
  • Bake at 450°F for 15 to 17 minutes or until golden brown.
  • Serve with pizza sauce for dipping .

    Cucumber Salad






    What You'll Need


    • three Med. Cucumbers Peeled and Sliced 1/4"
    • 1 C. water
    • 1/4 C. olive oil
    • two tsp.salt
    • one tsp. ground pepper
    • a couple sprigs of dill (optional)
    • one Med. Onion sliced and separate into rings
    • three Med. tomatoes cut into wedges
    • 1/2 C. Vinegar
    • 1/4 C. Sugar


    How to Make It

  • Combine all in a large bowl, toss making sure everything is coated well.
  • Refrigerate for at least two hrs before serving.
